So, I’m more of a cookie baker than anything else. Cookies are my buzz. Also, since my “pastry” posts are more popular than my “poetry” posts, you may be seeing more recipes than poems in the future. (But never fear, fellow poets! I plan on putting a poem up tomorrow) Let me know in the comments if you’d rather see more recipes or poems. I can’t please everybody, but I can try.
I’m trying to warn you that I may only be sharing cookie recipes for a long time. That’s what I get requests for.
Anyway, short story about these cookies: When Mom found out they were peanut butter oatmeal (i.e. NOT her favourite), she said, “Oh, good, I won’t be tempted to eat them” (and thus gain weight). Ten minutes after they came out of the oven, guess what she was munching on. That’s right, these babies.
Plus side of these cookies is that they’re super easy to make, and the recipe is a cinch to tweak.
- 1/2 cup peanut butter
- 1/2 cup rolled oats
- pinch of salt (omit of using salted peanut butter)
- 3/4 tsp baking soda
- 1/4 cup sugar (or less, if you’re brave)
- Preheat oven to 350 degrees F.
- Mix all ingredients with a rubber spatula.
- Roll into balls and flatten out.
- Bake for 8-10 minutes.
- Let cool, and they will harden up a little bit.
My brother said they were too sweet with 1/3 cup sugar. I think I’m finally managing to wean him off his sweet tooth. You’ll have to decide for yourself if you think they need more sugar.
If your cookies don’t hold together well, try adding one egg or a couple tablespoons of applesauce. Mine were fine with the sticky peanut butter and oats, though.
If you don’t have milk to drink with these, GET SOME!!
